I'm finishing up Culinary School now...and that is all true. They actually teach us most of it...besides the sanitation issues. Those are frowned upon. But that is more because our kitchens are classroom show kitchens so they have big windows. It's a messed up industry.
To further apply my nerdiness the American Culinary Federation is trying to make it so you have to be ACF certified to work in a kitchen. I don't think they believe in the 5 second rule.
